Cinnamon Coconut Paleo Pancakes
If you are on the fence about going gluten-free, or just want to cut down your gluten intake, trying out some paleo style recipes may be a great start. These are not going to entirely cure your hankering for bread, but after you have stopped eating gluten for awhile, a pancake like this can be like a god-send. I love the folks over at Nom Nom Paleo, and they have a wealth of free recipes, and lots of great practical tips for making healthy cooking fun, easy, and efficient. I’ve made these in a big batch and put half of them in a ziplock in the fridge and they reheat nicely for a few days… You can also try mixing or substituting buckwheat flour in this recipe if you dare. Whip some real cream for a topping. Get jiggy with it. And dance while you cook. If you don’t, it won’t taste nearly as good. :)
